Cooking Can Preserve, Boost Nutrient Content Of Vegetables

More proof that no one really knows what "healthy" food is.
"In a finding that defies conventional culinary wisdom, researchers in Italy report that cooking vegetables can preserve or even boost their nutritional value in comparison to their raw counterparts...

a small but growing number of studies suggest that cooking may actually increase the release of some nutrients. However, scientists are seeking more complete data on the nutritional properties of cooked vegetables, the researchers say."
Look, it is 2008 and we still are arguing whether cooking depletes nutrients from food.

Shouldn't we know this by now if we were so smart?

If you want to achieve health, achieve a BMI between 18.5 and 24.9.

Whatever belief system you choose to get there, i.e., vegetarian, vegan, organic, etc., is your business.

For now, given what we know, nothing else works.

Don't fall for the hype.
